Mediterranean Tuna Salad with Figs, Feta & Arugula

This isn’t your average tuna salad. We’ve combined our flaked Sundried Tomato and Basil tuna with our tuna in Olive Oil for a premium texture that perfectly complement Mediterranean staples. It’s a sophisticated, no-fuss meal that’s as bright and colourful as it is delicious.

Ingredients

4 (200 g) Mini cucumbers, sliced
½ cup (200 g) Cherry tomatoes, halved
6 (130 g) Black mission figs, quartered
½ cup (120 g) Mixed olives
1 can (85 g) Clover Leaf’s Flaked Light Tuna – Sundried Tomato and Basil
1 can (85 g) Clover Leaf’s Solid Light Tuna in Pure Olive Oil (not drained)
1½ cup (70 g) Baby arugula
¼ cup (50 g) Feta, crumbled

PREP INSTRUCTIONS

  1. Place the cucumbers, tomatoes, figs, olives, and both kinds of tuna in a bowl. Toss to mix.
  2. Pile the arugula in a serving bowl and top with the tuna mixture.
  3. Garnish the salad with the feta and serve immediately.
