Lemon & Pepper Tuna “Nachos”

These are no average nachos. A sophisticated take by substituting tortilla chips for fresh cucumber, and pile them with our Lemon & Pepper Tuna salad, and layers upon layers of veggies for an indulgence you won’t regret.


1 can (85 g) CLOVER LEAF® Flaked Light Tuna - Lemon & Pepper
1 tbsp Mayonnaise, reduced fat
1 tbsp Lemon juice
1 clove Garlic, minced
½ tsp Cumin powder
¼ tsp Harissa powder
1 English cucumber
1 Tomato, chopped
2 tbsp Kalamata olives, sliced
2 tbsp Pepperoncini, sliced
3 tbsp Red onion, chopped
3 tbsp Tahini
½ cup Baba ghanoush, store bought
1 tbsp Parsley, chopped


  1. In a medium bowl, mix tuna, mayo, lemon juice, garlic, cumin and harissa. Set aside.
  2. Slice cucumber into ¼ inch thick “chips” and arrange on a platter.
  3. Top cucumbers with tuna mixture. Then add tomatoes, olives, pepperoncini, onion, a drizzle of tahini, baba ghanoush, and a sprinkle of parsley.
  4. Serve immediately.
