Ingredients
1 tbsp (15 mL)
extra virgin olive oil

large onion, diced

celery stalk, chopped

medium green bell pepper, chopped
2
medium thin-skinned potatoes, diced
2 cans (213g each)
Clover Leaf Low Sodium Sockeye Salmon, drained and flaked (remove skin & bones as desired)
1 tsp (4 mL)
dry thyme leaves
1 tsp (4 mL)
dry marjoram leaves
1 tbsp (15 mL)
tomato paste
¼ tsp (1 mL)
paprika
1/8 tsp (0.5 mL)
ground white pepper
¼ tsp (1 mL)
salt
1 can (400-420g)
low sodium chicken broth
2 cups (500 mL)
whole milk
Preparation
- Heat oil in large pan. Add onion, celery, bell pepper and potatoes. Lightly sautee about 5 minutes.
- Add salmon, thyme, marjoram, tomato paste, paprika, white pepper, salt, chicken broth and milk.
- Stir mixture and bring to a gentle boil, simmer for about 15 minutes or until potatoes are tender.
- Serve with crackers.
Tip:
- Can also serve with crusty bread.
