Grilled Tuna Flatbreads

Grilled Tuna Flatbreads Ingredients
| 2 cans (85 g each) | Clover Leaf Flaked Light Tuna - Dill and lemon |
| 2 tbsp (30 mL) | Mango puree |
| 1 | lemon for zest |
| Few drops | Rice vinegar |
| 2 | Large whole wheat tortillas |
| 1/4 cup (50 mL) | Jar roasted red peppers, drained and cut into strips |
| 3/4 cup (175 mL) | Mild cheddar cheese |
| Sprigs of dill | |
| Plain yogurt (optional) |
Preparation
- Mix the tuna with the mango puree, lemon zest and rice vinegar. Spread the mixture on each tortilla. Place strips of roasted red pepper and cheese on top of tuna mixture. Add the sprigs of dill. Fold tortilla in half to enclose filling.
- Preheat a grill or nonstick skillet over medium heat and spray with cooking spray. Place flatbreads topped in the pan and broil 2 to 3 minutes each side or until they are well roasted and the cheese has melted.
- Cut each folded tortilla in half and serve hot with plain yogurt, if desired.
