Sriracha Tuna Bruschetta

Put these toasts out as a simple nibble to share with guests or prepare as a satisfying midday snack to enjoy with family.

Ingredients

1 can (85 g) CLOVER LEAF® Flaked Light Tuna - Sriracha
1 cup (250 mL) chickpeas, drained and rinsed
1 tbsp (15 mL) finely chopped fresh parsley
12 baguette slices, toasted
3 tbsp (45 mL) olive oil
1/4 cup (60 mL) thinly sliced sun-dried tomatoes

PREP INSTRUCTIONS

  1. Preheat oven to 400F (200C). Toss together tuna, chickpeas and parsley. 
  2. Brush baguette slices with olive oil; bake for 7 to 8 minutes or until crisp and golden.
  3. Divide tuna mixture evenly among slices of baguette. 
  4. Sprinkle sun-dried tomatoes over each slice of baguette. Serve immediately.  
Tips:  
  • Look for toasted baguette slices in the bakery section at the grocery store. 
  • Make this recipe gluten-free by using rice crackers instead of baguette slices.
