Ultimate Tuna Melt Sandwich

This tuna melt is sandwich gold! With layers of Clover Leaf Flaked Tuna with Sundried Tomato and Basil, olives, arugula and Havarti cheese, this sandwich packs a flavourful punch with every bite.

Ingredients

Basil Pesto
1 (120 g) bunch Basil
⅓ cup (20 g) Pine Nuts, toasted
1 cup (100 g) Olive Oil
¼ cup (40 g) Parmesan Cheese, grated
2 tbsp (10 g) Lemon Juice
Salt, a pinch for seasoning
Sandwich Layers
2 slices Sourdough bread
2 tbsp (15 g) Butter
4 tbsp (60 g) Basil pesto
½ cup (30 g) Baby Arugula
1 can (85 g) Clover Leaf Flaked Light Tuna - Sundried Tomato and Basil
1/3 cup (40 g) Mixed Olives, chopped
3 slices (25 g) Havarti Cheese, cut in strips

PREP INSTRUCTIONS

  1. To prepare basil pesto, add all the ingredients to a food processor except the lemon juice and blitz until smooth.
  2. Once smooth, add lemon juice and season with salt. Set aside.
  3. Slice the sourdough loaf.
  4. In a pan, add butter and toast two slices.
  5. Once toasted, apply pesto on one slice.
  6. Top with arugula.
  7. Spread Clover Leaf Flaked Tuna – Sundried Tomato and Basil over the arugula.
  8. Place chopped olives on top of tuna.
  9. Lay Havarti cheese over the olives and place in the oven to melt the cheese.
  10.  Once the cheese is melted, remove from the oven.
  11.  Spread basil pesto on the other slice of bread.
  12.  Place this slice, pesto side, over the melted cheese, as the top of your sandwich.
  13.  Cut in half and serve.
