Hooked On Tuna Burrito

Did you know that take out burritos contain 1000 – 1200 calories? Let’s REINVENT FAST FOOD with this lower calorie ‘Hooked On Tuna Burritto’ recipe from Clover Leaf, containing only 310 calories!

Ingredients

BAJA SAUCE ingredients
1 tbsp light sour cream
1 tbsp lime juice
1 tsp chili powder
1 tbsp plain non-fat yogurt
OTHER ingredients
2 cans (85 g each) Clover Leaf® Flaked Light Tuna - Lemon & Ginger with Sesame
½ cup tomato, seeded and diced
½ avocado, diced
2 tbsp salsa
1 tbsp cilantro (optional)
2 whole wheat flour tortillas, 10”
1 tsp lime juice

PREP INSTRUCTIONS

  1. In a small bowl, mix all of the Baja Sauce ingredients together thoroughly and refrigerate.
  2. Pre-heat oven to 375F. In another  bowl, combine the tuna with the Baja sauce, tomatoes, avocado, salsa and cilantro. Mix together until combined.
  3. Place the mixture on the flour tortilla and roll tightly. Place the wrapped tuna onto a baking sheet and bake for approximately 5 minutes or until golden brown.
  4. Remove from oven and serve with a splash of lime juice.

Tip: You could also serve with a dollop of low-fat sour cream.

Quick ‘n’ easy Rice and Black Beans 
1/2 cup Minute rice, cooked
1 tsp chili powder
3 tbsp black beans, rinsed
1 tbsp cilantro, chopped

  • Cook the Minute rice with chili powder until light and fluffy.
  • Fold in the black beans and add chopped cilantro.

Serves 2.

“Mock”ito
5 large fresh mint leaves
¼ cup lemonade
¼ cup lime juice
1 cup club soda
Ice
1 lime wedge

  • In a large glass, using the back of a spoon loosely mash half the fresh mint in the bottom of the glass.
  • Add the lemonade, lime juice and stir.
  • Add the club soda and top with ice.
  • Garnish with remaining fresh sprigs of mint and a lime wedge.

Serves 1.
