Sundried Tomato Tuna Rice Paper Roll

Looking for a light meal or an entertaining idea? These rolls are easy to make and delicious on it’s own or with dips suggested in our Tips.

Ingredients

2 can (85 g each) Clover Leaf Flavoured Light Tuna - Sundried Tomato & Basil
1 cup shredded romaine lettuce
8 fresh mint leaves, finely chopped
1 (or 1 cup) medium sized carrot, shredded
4 rice papers (approx. 8” / 22cm)

PREP INSTRUCTIONS

  1. In a large bowl, toss together the Clover Leaf tuna, with the romaine lettuce, fresh mint and shredded carrot. Set aside.
  2. Lay out a clean tea towel on a flat working surface. Soak one rice paper wrap in a shallow dish of hot water for 15 seconds or until pliable. Pull rice paper wrap out of the water and place on the towel to drain. Blot lightly with a second clean towel to remove excess moisture.
  3. Place ¼ of the tuna mixture along the centre of the rice paper. Fold the bottom of the wrap up over the filling. Fold the sides in to enclose the filling. Then roll tightly from filling side to the other end to form a roll.
  4. Slice at a slight angle across the middle and serve.

Tip:

  • Garnish with mint leaves.
  • Serve with lime wedges, wasabi-mayo (mix 1/4 cup mayo with 1/2 tbsp wasabi), hot sauce or Hoisin sauce (optional).
  • Scale back on the mint leaves used in the filling, if you so desire.
  • Rice paper wraps are found in grocery stores and Asian markets. You don’t cook rice paper wraps – just re-hydrate them in a little warm water.
