Salmon Cucumber Couscous
This Mediterranean-style salmon recipe is a quick 'Take 5' recipe that will fill you up like a main meal.

Ingredients
1 cup (250 mL)
couscous, uncooked
1 can (150 g or 142 g)
Clover Leaf Skinless Boneless Pink Salmon, drained
1 cup (250 mL)
cucumber, diced
1/2
red bell pepper, diced
1/4 cup (50 mL)
low calorie Herb n' Garlic vinaigrette
Preparation
- In a medium bowl, combine the dried couscous with 1¼ cups boiling water.
- Cover with plastic wrap for 4 minutes. Peel the plastic wrap away and with a fork, stir the couscous.
- Add the salmon, vinaigrette, diced cucumber and pepper.
- Toss together and serve on its own, garnished with cucumber round slices or in an iceberg lettuce cup, if desired.
Tip:
- Skinless Boneless Sockeye Salmon works well with this recipe, too.
