Kimchi Tuna Umami Soup

Comforting and full of bold flavour, this Kimchi Tuna Umami Soup brings together Clover Leaf Chunk Light Skipjack Tuna with tangy kimchi and a light, umami-rich dashi broth. Simple ingredients like garlic, onion, and a touch of honey balance the heat, making it an easy, satisfying option for any day of the week.

Ingredients

2 cans (170 g each) Clover Leaf Chunk Light Skipjack Tuna in Water
3 ½ cups Hot water
1 tsp (3.5 g) Instant dashi
1 tbsp (11 g) Canola oil
1 (105 g) Yellow onion, cut into wedges
2 cloves (10 g) Garlic, minced
1 cup (200 g) Kimchi, cut into bite-sized pieces
1 tsp (8 g) Honey
1 (12 g) Green onion, thinly sliced
1 tsp (3 g) Black sesame seeds

PREP INSTRUCTIONS

  1. Drain two cans of tuna; reserve the liquid. Set both the tuna and drained liquid aside.
  2. Add the instant dashi to the water and stir to combine. Set it aside, as well.
  3. In a pot, heat the oil over medium heat until it shimmers. Add the onion and sauté until just translucent. Stir in the garlic and sauté for a minute more.
  4. Add the kimchi to the pot, then add the kimchi juice, drained liquid from the cans, and honey. Simmer for 5 minutes.
  5. Pour in the dashi mixture and add the tuna. Simmer for another 15 minutes. To avoid breaking the tuna chunks, try not to stir the soup too much, or the tuna will flake apart.
  6. Spoon the soup into bowls and garnish with sliced green onions and black sesame seeds. Serve immediately.

Tip:

Instant dashi is a convenient, powdered Japanese umami-rich soup stock which provides savoury umami flavour to dishes. Dissolved in hot water, it acts as a quick substitute for homemade stock. Instant Dashi can be substituted using either 3½ cups of low-sodium chicken or vegetable stock, or a mixture of 1 tbsp of fish sauce or soya sauce in 3½ cups hot water for quick umami. However, taste will differ.
