Mediterranean Tuna Melt

Cheesy, tangy, toasty and a whole lotta YUM. This sandwich is a Mediterranean vacation in one bite.


1 can (170 g) Clover Leaf Solid White Albacore Tuna in Water, drained
¼ cup Hummus
3 tbsp Red onion, finely chopped
3 tbsp Sundried tomatoes in oil, finely chopped
2 tbsp (14 g) Pepperoncini, chopped
¼ cup artichoke hearts (canned), chopped
¼ tsp black pepper
4 tsp butter
2 slices (56 g) provolone cheese (low sodium)
4 slices (256 g) Crusty bread


  1. In a large bowl, mix together tuna, hummus, red onion, sundried tomatoes, pepperoncini, artichoke hearts, salt and pepper.
  2. Butter one side of each slice of bread with 1 teaspoon of butter.
  3. In a large sauté pan over medium-low heat, place 1 slice of bread in pan, butter side down. Then top with ½ of tuna mixture, 2 slices cheese and a slice of bread on top, buttered side up.
  4. Cook 3-5 minutes until bread is golden brown.
  5. Carefully flip sandwich over and cook another 3-5 minutes until other slice of bread is golden.
  6. Remove first sandwich from heat and repeat with second (or if your pan is big enough you can do both at once!).
  7. Slice each sandwich in half and serve immediately.
