Caribbean Crab Salad

For a citrus-sweet flavoured salad at lunch, this salad will just take you there!

Ingredients

2 pkgs (227g each)
Clover Leaf Crab Delectables™ - Flake Style, roughly chopped
1/4 cup (50 mL)
mayonnaise
1/2 cup (100 mL)
frozen peas
2 tbsp (30 mL)
chopped cilantro
1 tbsp (15 mL)
freshly squeezed lime juice
cayenne pepper, to taste
1 can (284mL)
whole mandarin orange segments in juice, drained
chive, garnish
lettuce leaves, on the side

Preparation

  1. In a bowl, combine Crab Delectables™, mayonnaise, frozen peas, cilantro, lime juice, cayenne pepper and orange segments, mixing thoroughly.
  2. Put a quarter of the mixture into a mould, and turn it out in the centre of the plate.
  3. Garnish with a chive and arrange lettuce leaves on the side.
  4. Serve immediately.
