Tuna Bacon Egg Muffin Cups

Load up before you get down to business with these delicious protein-packed egg muffin cups. With bacon! And tuna!

Ingredients

½ tsp Butter or cooking oil
6 slices Bacon, cooked, less salt
5 Eggs
2 cans (170g each) CLOVER LEAF® Chunk Light Skipjack or Yellowfin Tuna in Water, drained
½ cup Onion, finely chopped
1 cup Monterey Jack cheese, shredded
2 tbsp Milk
¼ tsp Black pepper

PREP INSTRUCTIONS

  1. Preheat oven to 375°F and grease center tray of 6-8 muffin cups. ​
  2. Chop cooked bacon and combine in a large bowl with eggs, tuna, onion, cheese, milk and pepper. ​
  3. Divide among prepared muffin cups.​
  4. Bake on center rack for 25-30 minutes, or until eggs are no longer runny, and remove from oven.​
  5. Once cool enough to touch, remove egg muffins from muffin tray and serve with your favourite sides.
