Grilled Brisling & Asparagus Sandwiches

Here's a healthy, omega-3 packed Grilled Sandwich. When not in season, replace Asparagus with either Spinach leaves or Green & Yellow Beans (fresh or frozen) .

Ingredients

Green asparagus spears
2 tbsp (30 mL)
chopped parsley
1-2
cloves of garlic - chopped
1/4 tsp (1 mL)
grated peel of a lemon
4
slices of whole grain bread
2 tbsp (30 mL)
olive oil
2 cans (106g ea.)
Clover Leaf Brisling Sardines in Olive Oil
lettuce and tomatoes, garnish

Preparation

  1. Chop off woody portion of asparagus spears. Boil, until just tender. Then cool in cold water. Remove and dry.
  2. Mix parsley, garlic and lemon peel in a bowl.
  3. Heat olive oil in a sautée pan over medium high heat. Brown bread slices on one side. Drain.
  4. Divide and place the asparagus, sardines and parsley mixture on the un-browned side of two slices of bread. Cover each with remaining two slices, browned side up.
  5. Serve sandwiches for two with garnish of lettuce and tomatoes slices.
