Algarve Paté Starter

A Portuguese-style pâté with Clover Leaf’s Mediterranean-seasoned Brisling Sardines … ideal for a light snack or you can prepare it in advance for an entertaining event.


1 thick slice, crusty bread, crusts removed
1/4 cup (50 mL) water
1/4 cup (50 mL) softened butter
1 can (80g) Clover Leaf Brisling Sardines, Mediterranean
1 tbsp (15 mL) finely chopped green onion, white part only
1 tsp (5 mL) each, hot pepper sauce and lemon juice
1 tsp (5 mL) extra virgin olive oil (optional)
Mixed olives
Additional sliced bread


  1. Drizzle the bread with the water and let stand until the bread absorbs all the liquid. Transfer to a food processor. Add the butter, sardines – including the can liquid, onion, hot pepper sauce and lemon juice. Process until smooth, scraping down sides of bowl as necessary. Transfer to a crock and refrigerate for at least 30 minutes before serving or for up to 2 days.
  2. Drizzle the top of the spread with extra virgin olive oil, if using. Serve immediately with additional sliced bread and olives, as a snack or as a first course.
  3. Makes 1 cup (250 mL) .
