Fettuccine with Clam Sauce

This gutsy supper dish makes a super quick meal for company. Don’t be afraid of the garlic, it mellows with the other flavours.

Ingredients

1 lb (500 g) dry fettuccine pasta
1/4 cup (50 mL) olive oil
6 cloves garlic, crushed
1/2 tsp (2 mL) dried thyme
1/4 tsp (1 mL) dried hot chili flakes
2 cans (142 g each) Clover Leaf Baby Clams
2/3 cup (150 mL) dry white wine
1/3 cup (75 mL) coarsely chopped chives
Garnish: chive blooms (optional)

PREP INSTRUCTIONS

  1. Cook pasta according to package directions; drain and return to pasta saucepan.
  2. Meanwhile in a medium skillet heat oil over medium heat, sauté garlic until softened, about 2 minutes. Stir in thyme and chili flakes. Drain clams, adding the clam liquid and wine to skillet. Cook approximately 5 minutes or until liquid is reduced to half.
  3. Stir in clams and heat 1 minute; add clam mixture to drained pasta with chopped chives and toss to mix thoroughly. Garnish with chive blooms, if desired.
