Crab Rice

Now here’s what every family needs – an easy to prepare, healthy and sumptuous stir-fry meal.

Ingredients

1 tbsp (15 mL) oil
1 tsp (5 mL) finely minced fresh ginger
1 tsp (5 mL) finely minced fresh garlic
1 packet (One of 4-in-1 pack) Clover Leaf Crab Delectables™, flake style, coarsely chopped
4 cups (1 L) cooked white rice
1/3 cup (75 mL) frozen peas, thawed
1/3 cup (75 mL) diced carrot
3 green onions, thinly sliced
2 eggs, beaten
2 tbsp (30 mL) soya sauce

PREP INSTRUCTIONS

  1. In a wok or a large heavy non-stick skillet, heat oil over high heat until hot but not smoking.
  2. Add the ginger and garlic and cook a few seconds, do not burn. Then, add the Crab Delectables™, rice, peas, carrot and green onions. Stir-fry for about 2 minutes.
  3. Then make a hole in the middle of the mixture and add the beaten eggs. Scramble, then stir into rice. Sprinkle rice with soya sauce and stir in. Serve immediately.

Tip:

  • For a spicy version, add chilli paste, to taste. Add diced red pepper, snow peas and/or sliced mushrooms, if desired. Garnish with thinly sliced green onions.
