Crab Cheese Crostini

When making an impression is a priority, here's a simple yet classy appetizer that will surely wow the crowd and raise a few eyebrows.

Ingredients

1 (250-270g)
baguette loaf
1 pkg (227 g)
Clover Leaf Crab Delectables™, Flake Style, chopped or try new PRE-SHREDDED Crab Delectables
1/2 tsp (2 mL)
grated lemon rind
1 tbsp (15 mL)
lemon juice
1/4 cup (50 mL)
light sour cream
2 tbsp (30 mL)
each chopped chives (or green onions) and parsley
salt and pepper
1 pkg (250 g)
Light Cream Cheese, Mediterranean Salsa (Brand - Lactantia*)

Preparation

  1. Cut baguette into 30 1/2” (1 cm) thick slices. Place on large baking sheet. Bake at 425°F (220°C) 5-7 minutes or until lightly browned and crisp. Cool.
  2. Combine crab, lemon rind and juice, sour cream, chives and parsley. Add salt and pepper to taste.
  3. Spread each bread slice with a heaping teaspoon of cheese. Top with crab mixture.

Tip:

* If you can’t find Lactantia Light Cream Cheese, Mediterranean Salsa, here is how you can make your own. 
 
250g brick         plain or light cream cheese 
3 Tbsp             salsa 
½ Tsp              chili powder 
 
Mix the cream cheese, salsa and chili powder.  Refrigerate for 4 hours.
