Cajun Spiced Tuna Quesadilla

This is a tantalizing twist to the standard quesadilla with cajun infused spices, mango and lime with flaked white tuna. A must have as a snack, meal or as appetizers.

Ingredients

½ cup (125 mL) goat cheese
⅓ cup (75 mL) mild salsa
¼ bunch cilantro leaves
1/2 finely chopped red onion
½ cup (125 mL) mango, diced
2 tbsp (30 mL) extra virgin olive oil
1 tsp (5 mL) Cajun spice
1 can (170 g) Clover Leaf Flaked White Tuna in Water, drained
juice of one lime
6 small whole wheat tortillas
salt to taste

PREP INSTRUCTIONS

  1. In a large bowl, combine cheese, salsa, cilantro, onions and mango.  Season to taste and set aside. 
  2. In non-stick skillet, heat oil and Cajun spice. Add in tuna and lime and cook for 2-3 minutes. 
  3. Mix the tuna mixture with cheese mixture. 
  4. Spread mixture evenly over 3 tortillas and cover with the 3 remaining tortillas. Lightly oil top of tortillas with non-stick cooking spray or regular oil.
  5. Heat the BBQ grill to medium heat. Place oiled side down on grill. Cook for 3-4 minutes or until lightly browned and crisp.
  6. Oil the top tortilla, carefully flip the quesadilla and heat through for additional 3-4 minutes till cheese is melted.
  7. Serve immediately either whole as a meal or in wedges as appetizers.

TIP: If using an oven, preheat to 425F (220C). Oil both sides of the quesadillas on a baking sheet and then transfer to the oven. Heat for approx. 10 minutes.
