Tuna Crumpets

A savoury twist to the traditional pancake, these crumpets are delicious. When pre-made, just quickly warm in the microwave and they’re ready to serve hungry kids. Try also with Clover Leaf’s Low Sodium Skipjack Light Tuna.


1/2 cup (125 mL) pancake mix
1/3 cup (75 mL) milk
1 egg
2 tsp (10 mL) vegetable oil
1 can (170 g) CLOVER LEAF Flaked Light Tuna (regular or low sodium), drained
2 tbsp (30 mL) finely chopped green onion
2 tbsp (30 mL) finely chopped red pepper
2 tbsp (30 mL) chopped parsley
1/2 cup (125 mL) sour cream
1/4 cup (50 mL) mayonnaise
2 tsp (10 mL) dijon mustard


  1. Combine pancake mix, milk, egg and oil. Whisk until fairly smooth. Stir in tuna, onion, red pepper and parsley.
  2. Heat skillet over medium heat; brush with oil. Drop batter by level tablespoon onto skillet, spreading to 5 cm (2-inch) circles.
  3. When underside is golden, turn over and bake until other side is golden. Keep warm. Repeat until all batter is used.
  4. Prepare the sauce by mixing sour cream, mayonnaise and mustard until smooth.
  5. Spoon a little sauce on top of each crumpet, or dip crumpet in sauce.
