Tuna Pies

Looking for a quick, flavour-packed bite? These mini Tuna Pies are filled with tender vegetables and Clover Leaf Tuna in Olive Oil, all wrapped in a golden, crispy pastry. Easy to assemble and even easier to enjoy, they make the perfect warm comfort snack.

Ingredients

1½ tbsp Olive oil (drained from Clover Leaf Tuna can)
⅓ cup Red onion, diced
¼ cup Red bell pepper, diced
¼ cup Green bell pepper, diced
¼ cup Tomato, diced
2 Garlic cloves, grated
½ tsp Smoked paprika
¼ tsp Salt
¼ tsp Black pepper
3 tbsp Fresh cilantro, chopped
2 cans (80g each) Clover Leaf Tuna in Olive Oil, drained - drain all but 1 ½ tbsp olive oil to sauté.
1½ tbsp fresh lime juice
1 Pie crust sheet, cut into eight 4-inch discs
For brushing:
Either 1 egg whisked with 1 tbsp water
or 2 tbsp avocado oil if available.

PREP INSTRUCTIONS

  1. Pre-heat oven to 425 degrees.
  2. Sauté the onions, tomatoes, and green and red bell peppers in 2 tablespoons of olive oil over medium heat until very tender, about 8 minutes.
  3. Add garlic, cilantro, smoked paprika, and salt and pepper. Stir to combine and cook another 2 minutes. Add lime juice and drained tuna to pan and gently mix. Remove from heat, allow to cool.
  4. While the tuna and vegetable filling cools, arrange the pie dough rounds on a parchment-lined baking sheet. Spoon about ¼ cup of filling onto each round, leaving a clean border for sealing. Lightly brush the inner edge with water or a beaten egg, fold the dough over, and press the edges firmly with a fork to seal.
  5. Brush the tops of the pies with either avocado oil or a beaten egg mixture.
  6. Bake in the conventional oven on the centre rack for 12–15 minutes, or until golden brown. Air fryer option: Preheat the air fryer to 375°F. Arrange the tuna pies in a single layer with space between each one, and air fry for 6–9 minutes, flipping halfway for even browning.
  7. Let cool for 10 minutes before serving.

Tip:

  • If available, use store bought empanada wrappers, instead of pie crust.
