Keto Tuna Tacos

Keto-friendly, fast, and delicious. This keto taco recipe loads our lean protein with your favorite taco toppings in a lettuce shell so you never have to miss Taco Tuesday for your wellness goals again.

Ingredients

1 can (170g) CLOVER LEAF® Solid White Albacore Tuna, drained
¼ cup Pumpkin seeds
¾ cup Cilantro, packed
½ cup Spinach, packed
¼ cup Sour cream, light
3 Spring onions, chopped
1 tbsp Lime juice
¼ tsp Sea salt
¼ tsp Black pepper
8 leaves Boston/Bibb lettuce
Toppings:
4 tbsp Sour cream, light
8 tbsp Cheese, low sodium, shredded
8 Cherry tomatoes, cut into quarters
½ cup Red onion, chopped

PREP INSTRUCTIONS

  1. Blend together seeds, cilantro, spinach, sour cream, spring onions, lime juice, salt and pepper to form a smooth dressing.
  2. Add dressing to tuna and gently stir together to coat.
  3. Divide the tuna mixture onto lettuce leaves, then top each with your favorites. We used sour cream, cheese, tomato and red onion.
