Crab Bruschetta

Bruschetta was originally toasted bread, rubbed with garlic and drizzled with olive oil. This version is a delicious variation with our crabmeat that can be served as a light meal or as appetizers, in just 20 minutes, for family events.

Ingredients

1 (about 65 cm / 25.5" long) (about 250 g) baguette
1 cup (250 mL) diced and seeded fresh tomatoes (1 large)
2 cloves garlic, crushed
1 can (120 g) Clover Leaf Crabmeat 15% Leg Meat, drained
1 tbsp (15 mL) olive oil
1 tbsp dried basil
1 tsp (5 mL) lemon juice
1/2 cup (125 mL) shredded feta or mozzarella cheese
1/4 cup (50 mL) torn fresh basil leaves, for garnish

PREP INSTRUCTIONS

  1. Slice the baguette to yield at least 16 slices. Thickness can range from 3/4″ to 1.5″ (2 cm to about 4 cm). Store remaining bread.
  2. Broil the slices until lightly browned.
  3. In a medium bowl, add tomatoes, garlic, crabmeat, oil, dried basil and lemon juice. Stir gently to mix.
  4. Spread mixture over toasted baguette slices. Sprinkle with cheese.
  5. Broil 2-3 minutes or until cheese has melted.
  6. Top with fresh basil. Serve.

Tips:

  • This recipe works with our Chunk Crabmeat product as well.
  • Substitute 2 tbsp (30 mL) grated Parmesan cheese for feta.
  • Prepare crab mixture a few hours ahead; then top bread and broil at serving time.
  • Makes 4-6 lunch servings or 16 appetizers.
  • Use remaining bread as croutons in a green salad with vinaigrette.
