Teriyaki Salmon Stir Fry

It’s the perfect combination of protein and fibre with colour and bold flavour – ideal for busy weeknights when you want something satisfying and wholesome.

Ingredients

1 tbsp (15 ml) Vegetable/canola oil
2 cups Carrots, peeled and sliced
2 cups Broccoli florets
1 Red bell pepper, seeded and thinly sliced
2 cloves Garlic, minced
1 tbsp (7 g) Fresh ginger, minced
2 cans (80 g each) Clover Leaf Wild Flaked Salmon - Olive Oil
1/4 cup Low-sodium teriyaki sauce
1 Green onion, thinly sliced
1 tbsp (10 g) Toasted sesame seeds, for sprinkling

PREP INSTRUCTIONS

  1. Prepare about 2 cups of uncooked long grain white or brown rice according to package directions to make about 6 cups of cooked rice. Alternatively, use a preferred carb option. Set aside.
  2. In a skillet or wok, heat the oil until shimmering. Add in carrots, broccoli, and red pepper. Sauté until tender. About 8-10 minutes.
  3. Stir in the garlic and ginger and sauté for a minute more. Add the salmon and teriyaki sauce and continue to cook until heated through.
  4. Serve the stir fry over rice and garnish with green onions and sesame seeds. Serve immediately.

Tip: 

  • Preferred carb options include but not limited to cauliflower rice, quinoa, rice noodles, udon noodles, wild rice, others.
