Tuna Patty

Cooking solo can be a challenge but this tasty patty — using single serve flavoured tuna — comes to the rescue! Served over a tossed green salad for a complete meal.

Ingredients

1 can (85 g) Clover Leaf Skipjack, Flaked Light Tuna-Lemon and Pepper
1/2 cup (125 mL) fresh whole-wheat breadcrumbs
1 tbsp (15 mL) each light mayonnaise and chopped green onion
1 tsp (5 mL) Dijon mustard
1 slice each tomato and English cucumber (optional)

PREP INSTRUCTIONS

  1. Stir the tuna with the breadcrumbs, mayonnaise, green onion and mustard until combined. Form the mixture into a round patty.
  2. Spray a small nonstick skillet with cooking spray; set over medium heat. Cook the patty for 3 minutes on each side or until lightly golden and hot throughout.
  3. Top the patty with tomato and cucumber (if using) . Makes 1 serving.

Tips:

  1. For kid-friendly flavour, omit Dijon mustard and stir in some chopped dill pickles.
  2. Blend some capers into calorie-reduced mayonnaise to create a gourmet topping for this tasty patty.
