Spicy Tuna Chili

This is the best Spicy Tuna Chili recipe that'll knock your socks off. Works great as a meal and an appetizer too.

Ingredients

1/2
chopped onion
1/2 cup (125mL)
fresh corn kernels, uncooked
1
chopped garlic clove
¼ cup (50 mL)
extra virgin olive oil
2 tsp (10 mL)
chili powder
1/2 tsp (2 ml)
cumin
1
bay leaf
2 cups (500 mL)
canned diced tomatoes with juice
1 cup (250 mL)
canned mixed beans, drained and rinsed
To taste
salt and black pepper
4 cans (85 g each)

sour cream, topping
¼ bundle
cilantro, garnish

Preparation

  1. In a casserole pan, cook the onion, corn and garlic for a few minutes in olive oil, over medium heat, till the onions are translucent. 
  2. Add in the chili powder, cumin and bay leaf, and cook for 2 minutes to bring out the essential oils in the spices that flavours the dish.
  3. Add tomatoes and red beans.  Mix well and let it cook for about 5 minutes over medium heat. Season with salt and pepper, if desired.
  4. Now add the tuna and mix gently to avoid crushing the beans.
  5. Serve hot topped with sour cream and garnished with cilantro. 

TIP: 

  • To reduce the intensity, drop the garlic used in the 1st step and reduce the quantity of chili powder in the 2nd. 
  • This dish works well as an appetizer, served with nachos.
