1 can (142 g) Clover Leaf® Flaked Light Tuna - Spicy Thai Chili
1 cup Fresh whole-wheat bread crumbs
1 Egg yolk, beaten
1/4 cup Chopped fresh mint leaves, divided
2 tbsp Chopped fresh coriander leaves
Yogurt Peanut Sauce:
1/3 cup Plain yogurt
2 tbsp Peanut butter
1 tbsp Mango chutney
1 Green onion, chopped
1/2 tsp Finely grated lime zest
Raita Dip:
1/3 cup Plain yogurt
1 tbsp Finely chopped cucumber
1 tsp Chopped fresh mint
Pinch of ground cumin
Pinch of cayenne pepper
Salt and pepper to taste
Tip:
- This recipe doubles easily and can be made ahead when entertaining. Refrigerate assembled kabobs on a baking tray for up to 1 day before broiling
