Spicy Thai Chili Tuna Cucumber Salad

What an incredible combination – spicy tuna in a tangy, peanuty dressing with a hint of sesame. The fresh flavour of cucumber, cilantro and scallions balance out the dish while hitting your taste buds from all sides.


1/4 cup Reduced-sodium, fat-free chicken broth
2 tbsp Reduced-sodium soy sauce
4 1/2 tsp Reduced-fat peanut butter
1/2 tsp Sesame oil
1 can (142 g) Clover Leaf® Flaked Light Tuna - Spicy Thai Chili
2 cup Diced cucumber
2 Scallions, chopped
4 tbsp Cilantro, fresh, chopped
4 cups Romaine lettuce, chopped


  1. In one bowl, whisk together chicken broth, soy sauce, peanut butter, and sesame oil. Set aside.
  2. In another large bowl, combine tuna, cucumber, scallions, and cilantro. Toss to combine.
  3. Add dressing and toss to coat.
  4. Add Romaine lettuce and toss to coat.
  5. Serve immediately.
