Salmon Tarragon Crepes

An elegant addition to any brunch. Impress your guests with this unique and savoury dish!

Ingredients

homemade crepes (see recipe below)
1 cup
finely chopped mushrooms
1
finely chopped green onion
1 tbsp (15 mL)
olive oil
2 cans (213 g)
Clover Leaf Low Sodium Pink Salmon, drained and flaked (remove skin & bones as desired)
1/3 cup
finely chopped fresh tarragon
1 package
chicken gravy mix - low sodium
1/3 cup
sour cream

Tarragon sprigs for garnish

Preparation

  1. Prepare crepes as directed in recipe below.
  2. Preheat oven to 350° F.
  3. Sauté mushrooms and green onion in olive oil. Mix with flaked salmon and tarragon.
  4. Prepare chicken gravy mix according to package directions. Let cool slightly; whisk in sour cream.
  5. For each crepe, place 2 asparagus spears and 1/8th of salmon mixture down the center of the crepe. Fold over and set rolled crepes in a baking dish. Pour sauce over crepes. Cover dish with tin foil. 
  6. Bake 20-25 minutes until heated through. Serve with tarragon sprigs for garnish.

Tips:

  • Low Sodium Sockeye Salmon may be substituted for the Low Sodium Pink Salmon.
  • Depending on how much time you have, crepes can be store-bought.

 

Crepe Recipe

Ingredients:

1 cup all-purpose flour
0.5 cup liquid eggs
0.5 cup milk
0.5 cup water
0.25 tsp salt
2 tbsp butter, melted

Directions:

  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
