Salmon Bisque

A warm comforting dish sure to calm and soothe the family on cold, winter days.

Ingredients

2 tbsp (30 mL)
butter or margarine
1/4 cup (50 mL)
finely chopped onion
1/2 cup (125 mL)
finely chopped celery
1 can (150 g or 142 g)
Clover Leaf Skinless & Boneless Pink Salmon
1 can (284 mL)
cream of celery soup
1/2
soup can milk
1/2
soup can of water
2 tbsp (30 mL)
ketchup
2 tbsp (30 mL)
finely chopped fresh parsley
1/4 tsp (1 mL)
dried thyme
1/8 tsp (0.5 mL)
pepper

Preparation

  1. Melt butter in medium saucepan over medium heat.
  2. Stir in onion and celery until translucent and lightly golden, about 3 minutes.
  3. Remove from heat. Add salmon chunks and juice.
  4. Add all remaining ingredients.
  5. Return to heat, stirring gently until mixture begins to simmer.
  6. Remove from heat. Serve at once.
