Mango Salsa on Lobster Quesadilla

A delicious Mexican meal that works as an appetizer as well, with a tangy salsa on the side - Mucho Gracias!

Ingredients

Salsa:
1
mango, peeled, seeded and chopped
3 tbsp (45 mL)
chopped red onion
1
jalapeño pepper, seeded and minced
1 tbsp (15 mL)
lime juice
Quesadilla:
1 pkg (227 g)
Clover Leaf Lobster Delectables™, flake style or Clover Leaf Crab Delectables™, Flake Style
3 tbsp (45 mL)
chopped cilantro
2 cups (500 mL)
shredded Monterey Jack cheese
4 (10-inch/25 cm)
flour tortillas

Preparation

  1. For salsa, mix first 4 ingredients.
  2. Next, toss lobster with cilantro and cheese; scatter over 2 tortillas. Cover each with another tortilla.
  3. Heat in skillet until cheese melts, turning once.
  4. Cut into wedges. Serve with salsa.
