Italian Crab Scramble

Ingredients

8
large eggs
1 tbsp (15 mL)
water
2 tsp (10 mL)
olive oil
salt and pepper, to taste
1 pkg (227 g)
Clover Leaf Crab Delectables™, Flake Style
1/2 tsp (2 mL)
dried basil leaves (or 1 tbsp/15 mL chopped fresh basil)
1 cup (250 mL)
packed, torn fresh spinach leaves
1/4 cup (50 mL)
chopped roasted peppers
1/2 cup (125 mL)
shredded Italian cheese blend or shredded mozzarella

Preparation

  1. In a large bowl, whisk eggs and water together until frothy.
  2. In a large non-stick skillet, heat olive oil until hot. Add the egg mixture. Season with salt and pepper.
  3. With a heat-resistant spatula turn the eggs from the outside to the centre after they have set. When eggs are half cooked, add Crab Delectables™, basil, spinach, roasted peppers and cheese blend.
  4. Continue scrambling until eggs are set and spinach is just wilted.
  5. Serve immediately.
