Athena's Greek Pita

Here's a refreshing sandwich with a Mediterranean flair. Pre-chop ingredients so your kids can put it together as an after-school snack.

Ingredients

1/2 cup (100 mL)
chopped tomato
1/2 cup (100 mL)
chopped cucumber
1 tbsp (15 mL)
chopped red onion
2 tbsp (30 mL)
plain yogurt
2 tbsp (30 mL)
mayonnaise
2 tsp (8 mL)
lemon juice
2
lettuce leaves
1
pita bread round, halved
1 pouch (85 g)
Clover Leaf Rip'n Ready Pouch TM, Yellowfin Tuna
2 tbsp (30 mL)
sliced black olives (optional)

Preparation

  1. In a small bowl, blend tomato, cucumber, onion, yogurt, mayonnaise and lemon juice; toss in albacore.
  2. Place a lettuce leaf in each pita half.
  3. Mound albacore mixture into pitas and sprinkle with olives, if desired.
  4. Serve immediately.
