White Bean Tuna Salad
This hearty tuna salad with white beans works well as a wholesome meal, too. No cooking required; just chop and combine. Bon appétit!

White Bean Tuna Salad Ingredients
| 1 can (540 mL) | White beans, drained & rinsed |
| 1 can (796 mL) | Diced tomatoes |
| 1/4 cup (50 mL) | Red pepper, diced |
| 1/4 cup (50 mL) | Yellow pepper, diced |
| 2 tbsp (30 mL) | Red onion, diced |
| 1/4 cup (50 mL) | Extra virgin olive oil |
| 2 tbsp (30 mL) | Cider vinegar |
| 1 tsp (5 mL) | Chopped fresh thyme |
| 1 | Clove garlic, minced |
| Lemon juice | |
| Salt and pepper to taste | |
| 2 cans (85 g each) | Clover Leaf Flaked Light Tuna - Tomato & Onion |
| 2 cups | baby spinach (optional) |
Preparation
- In a large bowl, combine all ingredients except tuna, and season well.
- When ready to serve, add in the tuna at the last minute.
- Serve as is or on a bed of baby spinach.
