Tuna Steak on Butternut Squash Purée with Tomato Salsa Ingredients
| ½ cup (125 mL) | tomatoes, diced |
| 1/4 cup (60 mL) | red onions, diced |
| ¼ cup (60 mL) | red pepper, diced |
| ½ stack | chopped cilantro |
| ¼ cup (60 mL) | olive oil |
| 2 tbsp (30 mL) | apple cider vinegar |
| 4 pkgs (113 g each) | Clover Leaf Tuna Steak - Lemon & Pepper |
| 1 pinch | coriander seed |
| 1 litre | butternut squash purée, prepared |
| 1 pinch | ground nutmeg |
| salt and black pepper, to taste |
Preparation
- Prepare salsa by combining tomatoes, onions, peppers, cilantro, olive oil and vinegar. Season and set aside.
- Place the tuna steaks on a lightly oiled baking sheet. Season and sprinkle the steaks with crushed coriander seeds.
- Heat tuna steaks in a preheated oven at 350 F (175 C) for 7 - 8 minutes. Remove and let stand.
- Heat prepared squash purée in the microwave. Add nutmeg.
- When ready to plate, start by placing the heated squash purée in the center. Then add the tuna steak on top and mount a generous spoonful of salsa over it. Serve hot.
