Spicy Tuna Chili

Spicy Tuna Chili Ingredients
| 1/2 | chopped onion |
| 1/2 cup (125mL) | fresh corn kernels, uncooked |
| 1 | chopped garlic clove |
| ¼ cup (50 mL) | extra virgin olive oil |
| 2 tsp (10 mL) | chili powder |
| 1/2 tsp (2 ml) | cumin |
| 1 | bay leaf |
| 2 cups (500 mL) | canned diced tomatoes with juice |
| 1 cup (250 mL) | canned mixed beans, drained and rinsed |
| To taste | salt and black pepper |
| 4 cans (85 g each) | Clover Leaf Flaked Light Tuna – Garlic & Hot Pepper |

Preparation
- In a casserole pan, cook the onion, corn and garlic for a few minutes in olive oil, over medium heat, till the onions are translucent.
- Add in the chili powder, cumin and bay leaf, and cook for 2 minutes to bring out the essential oils in the spices that flavours the dish.
- Add tomatoes and red beans. Mix well and let it cook for about 5 minutes over medium heat. Season with salt and pepper, if desired.
- Now add the tuna and mix gently to avoid crushing the beans.
- Serve hot topped with sour cream and garnished with cilantro.
TIP:
- To reduce the intensity, drop the garlic used in the 1st step and reduce the quantity of chili powder in the 2nd.
- This dish works well as an appetizer, served with nachos.
