Tuna Patty
Cooking solo can be a challenge but this tasty patty -- using single serve flavoured tuna -- comes to the rescue! Served over a tossed green salad for a complete meal.

Tuna Patty Ingredients
| 1 can (85 g) | Clover Leaf Skipjack, Flaked Light Tuna-Lemon and Pepper |
| 1/2 cup (125 mL) | fresh whole-wheat breadcrumbs |
| 1 tbsp (15 mL) | each light mayonnaise and chopped green onion |
| 1 tsp (5 mL) | Dijon mustard |
| 1 slice | each tomato and English cucumber (optional) |
Preparation
- Stir the tuna with the breadcrumbs, mayonnaise, green onion and mustard until combined. Form the mixture into a round patty.
- Spray a small nonstick skillet with cooking spray; set over medium heat. Cook the patty for 3 minutes on each side or until lightly golden and hot throughout.
- Top the patty with tomato and cucumber (if using) . Makes 1 serving.
Tips:
- For kid-friendly flavour, omit Dijon mustard and stir in some chopped dill pickles.
- Blend some capers into calorie-reduced mayonnaise to create a gourmet topping for this tasty patty.
