Tuna & Asparagus Rolls Ingredients

16 asparagus spears
4 slices whole grain bread
2 cans (85 g each) Clover Leaf Skipjack Flaked Light Tuna, Lemon and Pepper
1/4 cup (50 mL) plain light cream cheese, softened
1/4 cup (50 mL) finely chopped red pepper
2 tbsp (30 mL) finely chopped red onion

Preparation

  1. Preheat the broiler. Blanch the asparagus spears in a pot of boiling water for 3 minutes. Remove and reserve.
  2. Meanwhile, use a rolling pin to flatten the bread slices so that they are thin enough to easily roll. Blend the tuna with the cream cheese, red pepper and onion until combined. Spread an equal amount of the tuna mixture over each of the slices. Place four asparagus spears at one end of each slice of bread. Roll up to enclose the filling; place, seam-side-down in a baking dish.
  3. Broil the roll ups on the middle rack, turning often, for 6 minutes or until evenly toasted and heated through. Makes 4 servings.

  5. For a gourmet filling, substitute softened chèvre-style goat cheese for the cream cheese.
