Tuna Pancakes
A savoury twist to the traditional pancake; when pre-made, just a quick warming in the microwave and they're ready to serve hungry kids. Try also with Clover Leaf's Low Sodium Skipjack Light Tuna.

Tuna Pancakes Ingredients
| 1/2 cup (125 mL) | pancake mix |
| 1/3 cup (75 mL) | milk |
| 1 | egg |
| 2 tsp (10 mL) | vegetable oil |
| 1 can (170 g) | CLOVER LEAF Flaked Light Tuna, drained |
| 2 tbsp (30 mL) | finely chopped green onion |
| 2 tbsp (30 mL) | finely chopped red pepper |
| 2 tbsp (30 mL) | chopped parsley |
| 1/2 cup (125 mL) | sour cream |
| 1/4 cup (50 mL) | mayonnaise |
| 2 tsp (10 mL) | dijon mustard |
Preparation
- Combine pancake mix, milk, egg and oil. Whisk until fairly smooth. Stir in tuna, onion, red pepper and parsley.
- Heat skillet over medium heat; brush with oil. Drop batter by level tablespoon onto skillet, spreading to 5 cm (2-inch) circles.
- When underside is golden, turn over and bake until other side is golden. Keep warm. Repeat until all batter is used.
- Prepare the sauce by mixing sour cream, mayonnaise and mustard until smooth.
- Spoon a little sauce on top of each pancake, or dip pancake in sauce.
