Spicy Thai Cucumber Salad
What an incredible combination - spicy tuna in a tangy, peanuty dressing with a hint of sesame. The fresh flavour of cucumber, cilantro and scallions balance out the dish while hitting your taste buds from all sides.

Spicy Thai Cucumber Salad Ingredients
| 1/8 cup (25 mL) | reduced-sodium, fat-free chicken broth |
| 1 tbsp (15 mL) | reduced-sodium soy sauce |
| 2 1/4 tsp (11 mL) | reduced-fat peanut butter |
| 1/4 tsp (1 mL) | sesame oil |
| 1 can (85 g) | Clover Leaf Flaked Light Tuna, Spicy Thai Chili |
| 1 cup (250 mL) | diced cucumber |
| 1 | scallions, chopped |
| 2 tbsp (30 mL) | chopped fresh cilantro |
| 2 cups (500 mL) | chopped Romaine lettuce |
Preparation
- In a small bowl, whisk together chicken broth, soy sauce, peanut butter, and sesame oil. Set aside.
- In a medium bowl, combine tuna, cucumber, scallions, and cilantro. Toss to combine.
- Add dressing and toss to coat.
- Add Romaine lettuce and toss to coat.
- Serve immediately.
