Spicy Crab Legs California Rolls
Perfect for an outdoor party, these rolls look as good as they taste. Rice paper wraps are found in grocery stores and Asian markets. You don't cook rice paper wraps - just re-hydrate them in a little warm water.

Spicy Crab Legs California Rolls Ingredients
| Chili Mayo-Sauce Dipping Sauce | |
| 1/4 cup (50 mL) | mayonnaise |
| 1 tsp (5 mL) | red chili paste (caution some chili paste is VERY hot) |

| 1/2 | English cucumber |
| 1 | small-medium firm ripe avocado |
| 1/2 inch (1.25 cm) | water |
| 8 | rice paper wraps (available at grocery and Asian stores) |
| 1 pkg (227 g) | Clover Leaf Crab Delectables™, Leg Style |
| 1 pkg (70 g) | alfalfa-style sprouts, preferably radish (kaiware) sprouts |
| 3 oz (90 g) | Optional: tobiko (flying fish roe) or masago (smelt roe) |
| Mesclun greens, for garnish |
Preparation
- To make Spicy Mayo, mix mayonnaise and red chili paste together and place in dipping dish; set aside.
- Cut cucumber into two pieces each about 3-inches (7 cm) long. Cut each piece into long, thin strips. Peel and cut the avocado length-wise into 8 pieces.
- Place about 1/2-inch (1.25 cm) warm water in a fry pan or flat hollow dish. Place 1 rice paper wrap in water; soak for 30 to 60 seconds and rice paper is pliable. Dab off any excess moisture with towel; lay flat on board.
- To assemble rolls, at about one-third from the bottom edge of the wrap, place 1 crab leg, 1 piece of avocado slice, about 1/8 the sliced cucumber and a sprinkle of sprouts. If using fish roe, spoon some along the length of the crab leg. Lift the bottom part of the wrap over the filling, tucking the edge under the filling. Bring in the side ends and firmly complete the roll. Cut each roll diagonally into 2 pieces; place upright on serving dish and garnish with salad greens. Serve with dipping sauce.
