A mouth watering snack of Clover Leaf's Garlic and Hot Pepper Flavoured Tuna mix on pita topped with grilled garden vegetables.

Middle Eastern Mini Pita Bites Ingredients

1 can (85 g) Clover Leaf Garlic & Hot Pepper Flaked Light Tuna
3 tbsp (45 mL) prepared baba ghanouj
2 cups (500 mL) deli-roasted or grilled vegetables such as peppers, eggplant, zucchini, onions and asparagus
1/2 cup (125 mL) crumbled feta cheese
8 white or whole wheat mini pitas (4-inch/10 cm diameter)

Preparation

  1. Blend the tuna with the baba ghanouj.
  2. Spread an equal spoonful of the tuna mixture in each mini pita.
  3. Coarsely chop any large vegetables and arrange on top of the mini pitas. Sprinkle with feta cheese.
  4. Serve cold or broil in an oven or a toaster oven for 5 minutes. Cut into quarters.

Tip:

  • Assorted pre-roasted or grilled vegetables are often available from the antipasto bar or behind the counter at the deli in most large grocery stores. Choose pre-cut vegetable to simplify the preparation.
