Lobster Stuffed Canapes
This super easy filling is also delicious as a spread for crackers.

Lobster Stuffed Canapes Ingredients
| 1 can (75 g) | Clover Leaf Bay Lobster Pâté |
| 1/3 cup (75 mL) | ricotta cheese |
| 1/3 cup (15 mL) | mayonnaise |
| 1 tbsp (15 mL) | finely chopped fresh dill (or ľ tsp/3 mL dried dillweed) |
| 1 tsp (5 mL) | finely grated lemon rind |
| 2 | heads Belgian endive, separated into leaves |
| 1 | English cucumber, cut into 1/2 |
| Fresh dill sprigs or onion sprouts (optional) |
Preparation
- In a small bowl mix lobster, ricotta, mayonnaise, dill and lemon rind; chill 30 minutes or longer to blend flavours.
- Using a small spoon or melon baller scoop out enough of centre of cucumber to form a bowl shape.
- At serving time spoon about 1 tsp/5 mL filling into endive leaves and cucumber slices. Garnish as desired.
- Makes 1 cup/250 mL filling or about 3 1/2 dozen canapés.
- Hint Lobster mixture may be prepared a day ahead; cover and refrigerate. Fill vegetables at serving time.
