Lobster Stuffed Canapes Ingredients

1 can (75 g) Clover Leaf Bay Lobster Pâté
1/3 cup (75 mL) ricotta cheese
1/3 cup (15 mL) mayonnaise
1 tbsp (15 mL) finely chopped fresh dill (or ľ tsp/3 mL dried dillweed)
1 tsp (5 mL) finely grated lemon rind
2 heads Belgian endive, separated into leaves
1 English cucumber, cut into 1/2
Fresh dill sprigs or onion sprouts (optional)

Preparation

  1. In a small bowl mix lobster, ricotta, mayonnaise, dill and lemon rind; chill 30 minutes or longer to blend flavours.
  2. Using a small spoon or melon baller scoop out enough of centre of cucumber to form a bowl shape.
  3. At serving time spoon about 1 tsp/5 mL filling into endive leaves and cucumber slices. Garnish as desired.
  4. Makes 1 cup/250 mL filling or about 3 1/2 dozen canapés.
  5. Hint Lobster mixture may be prepared a day ahead; cover and refrigerate. Fill vegetables at serving time.
