Mango Salsa on Lobster Quesadilla Ingredients
| Salsa: | |
| 1 | mango, peeled, seeded and chopped |
| 3 tbsp (45 mL) | chopped red onion |
| 1 | jalapeño pepper, seeded and minced |
| 1 tbsp (15 mL) | lime juice |
| Quesadilla: | |
| 1 pkg (227 g) | Clover Leaf Lobster Delectables™, flake style |
| 3 tbsp (45 mL) | chopped cilantro |
| 2 cups (500 mL) | shredded Monterey Jack cheese |
| 4 (10-inch/25 cm) | flour tortillas |
Preparation
- For salsa, mix first 4 ingredients. Next, toss lobster with cilantro and cheese; scatter over 2 tortillas. Cover each with another tortilla. Heat in skillet until cheese melts, turning once. Cut into wedges. Serve with salsa.
