Lobster Rice

Lobster Rice Ingredients
| 1 tbsp (15 mL) | oil |
| 1 tsp (5 mL) | finely minced fresh ginger |
| 1 tsp (5 mL) | finely minced fresh garlic |
| 1 pkg (227 g) | Clover Leaf Lobster Delectables™, flake style, coarsely chopped |
| 4 cups (1 L) | cooked white rice |
| 1/3 cup (75 mL) | frozen peas, thawed |
| 1/3 cup (75 mL) | diced carrot |
| 3 | green onions, thinly sliced |
| 2 | eggs, beaten |
| 2 tbsp (30 mL) | soya sauce |
Preparation
- In a wok or a large heavy non-stick skillet, heat oil over high heat until hot but not smoking. Add the ginger and garlic and cook a few seconds, do not burn. Then, add the Lobster Delectables, rice, peas, carrot and green onions. Stir-fry for about 2 minutes. Then make a hole in the middle of the mixture and add the beaten eggs. Scramble, then stir into rice. Sprinkle rice with soya sauce and stir in.
- Options: for a spicy version, add Asian chilli paste, to taste. Add diced red pepper, snow peas and/or sliced mushrooms, if desired. Garnish with thinly sliced green onions.
