Crab Patties

Crab Patties Ingredients
| 1 pkg (227 g) | Clover Leaf Crab Delectables, Flake Style or Leg Style, very finely chopped like shreds |
| 1 1/2 cups (375 ml) | fine, fresh breadcrumbs |
| 2 tbsp (30 ml) | each minced red onion and fresh parsley |
| 2 tbsp (30 ml) | each mayonnaise and Dijon mustard |
| 1 | egg beaten |
| 1/2 tsp (2 ml) | each finely grated lemon zest and pepper |
Preparation
- Blend the crab shreds with the breadcrumbs, onion, parsley, mayonnaise, Dijon mustard, egg, lemon zest and pepper until well combined. Form into four lacy-edged round patties.
- Chill for 15 minutes.
- Heat a large nonstick skillet or grill pan over medium heat. Spray with cooking spray. Add the crab patties in batches (work if the pan is crowded) . Cook, turning once and pressing gently with a flexible plastic spatula, for about 6 minutes or until golden on each side.
- Serve.
