Italian Crab Scramble Ingredients
| 8 | large eggs |
| 1 tbsp (15 mL) | water |
| 2 tsp (10 mL) | olive oil |
| salt and pepper, to taste | |
| 1 pkg (227 g) | Clover Leaf Crab Delectables TM, Flake Style |
| 1/2 tsp (2 mL) | dried basil leaves (or 1 tbsp/15 mL chopped fresh basil) |
| 1 cup (250 mL) | packed, torn fresh spinach leaves |
| 1/4 cup (50 mL) | chopped roasted peppers |
| 1/2 cup (125 mL) | shredded Italian cheese blend or shredded mozzarella |
Preparation
- In a large bowl, whisk eggs and water together until frothy.
- In a large non-stick skillet, heat olive oil until hot. Add the egg mixture. Season with salt and pepper.
- With a heat-resistant spatula turn the eggs from the outside to the centre after they have set. When eggs are half cooked, add Crab Delectables, basil, spinach, roasted peppers and cheese blend.
- Continue scrambling until eggs are set and spinach is just wilted.
- Serve immediately.
