Grilled Brisling & Asparagus Sandwiches
Here's a healthy, omega-3 packed Grilled Sandwich. When not in season, replace Asparagus with either Spinach leaves or Green & Yellow Beans (fresh or frozen) .

Grilled Brisling & Asparagus Sandwiches Ingredients
| 10 | Green asparagus spears |
| 2 tbsp (30 mL) | chopped parsley |
| 1-2 | cloves of garlic - chopped |
| 1/4 tsp (1 mL) | grated peel of a lemon |
| 4 | slices of whole grain bread |
| 2 tbsp (30 mL) | olive oil |
| 2 cans (106g ea.) | Clover Leaf Brisling Sardines in Olive Oil |
| lettuce and tomatoes, garnish |
Preparation
- Chop off woody portion of asparagus spears. Boil, until just tender. Then cool in cold water. Remove and dry.
- Mix parsley, garlic and lemon peel in a bowl.
- Heat olive oil in a sautée pan over medium high heat. Brown bread slices on one side. Drain.
- Divide and place the asparagus, sardines and parsley mixture on the un-browned side of two slices of bread. Cover each with remaining two slices, browned side up.
- Serve sandwiches for two with garnish of lettuce and tomatoes slices.
