Fettucini with Clam Sauce

Fettucini with Clam Sauce Ingredients
| 1 lb (500 g) | dry fettucini pasta |
| 1/4 cup (50 mL) | olive oil |
| 6 | cloves garlic, crushed |
| 1/2 tsp (2 mL) | dried thyme |
| 1/4 tsp (1 mL) | dried hot chili flakes |
| 2 cans (142 g each) | Clover Leaf Baby Clams |
| 2/3 cup (150 mL) | dry white wine |
| 1/3 cup (75 mL) | coarsely chopped chives |
| Garnish: chive blooms (optional) |
Preparation
- Cook pasta according to package directions; drain and return to pasta saucepan.
- Meanwhile in a medium skillet heat oil over medium heat, sauté garlic until softened, about 2 minutes. Stir in thyme and chili flakes. Drain clams, adding the clam liquid and wine to skillet. Cook approximately 5 minutes or until liquid is reduced to half.
- Stir in clams and heat 1 minute; add clam mixture to drained pasta with chopped chives and toss to mix thoroughly. Garnish with chive blooms, if desired.
