Creamy Crab and Asparagus Linguine Ingredients
| 8 oz (250 g) | uncooked linguine |
| 1 tbsp (15 mL) | oil |
| 1 cup (250 mL) | finely chopped shallots |
| 1/2 cup (125 mL) | sliced yellow sweet pepper |
| 1 lb (500 g) | asparagus, cut into 2-inch (5 cm) pieces |
| 1 | clove garlic, minced |
| 1/2 cup (125 mL) | each: white wine, chicken broth (or all broth) |
| 1 pkg (250 g) | cream cheese, softened |
| 1 tbsp (15 mL) | finely grated lemon rind |
| 1 pkg (227 g) | Clover Leaf Crab Delectables TM, Flake Style or Leg Style, chopped into very fine strips like shreds |
| 1/2 cup (125 mL) | grated Parmesan cheese |
Preparation
- Cook pasta according to package directions.
- Meanwhile, heat oil in large skillet over medium heat. Add shallots, sweet pepper and asparagus. Cook, stirring for 3 to 5 minutes, until vegetables are tender crisp.
- Stir in garlic; cook 1 minute.
- Add wine, broth, cream cheese and lemon rind. Cook, stirring, until smooth and bubbly.
- Stir in drained linguine and Crab Delectables. Toss until well coated with sauce. Sprinkle in cheese.
- Serve immediately.
